Strawberry Spinach
Salad

1 pound asparagus |
8 c. spinach, torn |

1/3 c. bottled salad dressing, such as poppy seed or
Italian |
2 c. sliced fresh strawberries and whole blueberries |
|
¾ to 1 pound cooked turkey, cut into ½ inch cubes |
1 tsp. finely shredded orange peel |
|
¼ c. pecan halves, toasted |
1 T. orange juice |
Cut cleaned asparagus into one inch pieces. Cook,
covered in small amount of boiling, salted water 3-5 minutes. Drain.
Rinse with cold water and let stand in cold water until cool.
Drain. Mix together bottled dressing with orange peel and orange juice.
Set aside. In a salad bowl, combine spinach, asparagus, berries,
turkey. Serve topped with pecans.
