Raspberry Beets Vinaigrette

8 cooked beets, peeled, sliced |
Dressing: |

2 medium sweet onions, thinly sliced |
3 T. raspberry vinegar |
|
|
2 T. balsamic vinegar |
|
|
1 clove garlic, minced |
|
|
½ c. olive oil |
|
|
salt and pepper |
Combine beets and onions in a salad bowl. Mix vinegars and garlic and whisk in oil in a steady stream. Add salt and pepper to taste. Toss dressing with beets and onions.
