Green Beans a L’Anglaise
This is how restaurants prepare fresh beans: Take fresh beans, a large pot of water, and 1 or 2 T. of salt. (The salt sets the green color and you rinse it off in the cold running water.) Bring salted water to a rolling boil, put in the trimmed beans and cook until just tender-crisp. Drain beans into a colander and cool immediately under very cold running water. The beans will be a beautiful dark green. Use in salad, or reheat the beans thoroughly in some butter with fresh herbs just before serving.
